You’ll just need a handful of simple and delicious ingredients to get started.
Ingredients to make this vegan quesadilla:
- Green onion
- Black Beans
- Corn
- Sauteed veggies — water sauteed using about 2-4 tablespoons of water so the veggies don’t stick to the pan
- Red onion
- Bell pepper
- Mushrooms
- Salt pepper + 1 tsp dried oregano
- Vegan Queso
- 2 tortillas
- Guacamole
- Salsa
Warm black beans and corn up.
Next, chop up the green onions.
Slice up the onion, bell pepper, and mushrooms and water sautee them. Season them while sauteeing them.
On a skillet, warm 2 tortillas up.
Once done, place some queso on 1 tortilla and layer with beans, corn, sauteed veggies, and green onions top with more queso. Top with the other tortilla and flip the quesadilla over to brown the other tortilla.
Serve with guac and salsa.
Is this Vegan Quesadilla spicy?
It’s not but you can make it that way if you want. Just add some fresh jalapenos or some super spicy salsa at the end to really take it up a notch in flavor and heat.
