Ingredients

  • 1 cup raw cashews
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

  • Place all the ingredients in a high-speed blender or food processor. Pulse until you get a coarse consistency. You may need to scratch the sides a few times with a spatula.

  • Add additional salt and seasonings to taste as needed.

Notes

Optional: Add a pinch of turmeric powder to enhance the color of the vegan parmesan.
Store this vegan parmesan in the fridge for up to two weeks in an air-tight container.
Cashew nuts can be replaced with raw sunflower seeds. The result is a bit different but delicious too.
You can try mixing spices to develop flavors of vegan parmesan. Other options could be using smoked paprika, cayenne pepper, or your favorite cajun spice.
