Vegan Double Chocolate Chip Cookies

Ingredients

  • 1/2 cup Vegan Butter
  • 1/3 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 tbsp Flax Meal
  • 2 1/2 tbsp Water
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Vanilla
  • 1/4 cup Cocoa Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 cup AP Flour
  • 1 cup Vegan Chocolate Chips
  • 1 cup Vegan White Chocolate Chips

Instructions

  • Preheat oven to 350 degrees F
  • In a small bowl combine the flax meal and the water. Set aside for a few minutes and allow to thicken.

  • In a medium mixing bowl combine the butter, both sugars, vanilla, and apple cider vinegar. Mix well until the sugar has mostly dissolved.

  • Add the flax meal mixture to the butter and sugar mixture. Mix until completely dissolved.
  • In a different bowl combine the cocoa powder, baking powder, baking soda, and flour with a whisk.
    1/4 cup Cocoa Powder, 1 tsp Baking Powder, 1/4 tsp Baking Soda, 1 cup AP Flour
  • Add the dry ingredients to the butter mixture. Mix until the flour mixture has fully combined.
  • Add in the vegan chocolate and white chocolate chips. Fold them in with a spatula so the chips stay intact.
    1 cup Vegan Chocolate Chips, 1 cup Vegan White Chocolate Chips
  • Spoon out a small amount of cookie dough onto a parchment-lined cookie sheet. Bake at 350 degrees F for 8-10 minutes or until the edges have browned slightly and the middle isn't doughy looking.
