Ingredients

  • 1/2 cup vegan butter
  • 1 cup sugar
  • 1/4 tsp baking soda
  • 1/4 tsp cream of tartar
  • 2 tbsp flax meal + 2 tbsp water
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp cinnamon

Instructions

  • In a bowl combine the flax meal and water. Set aside and allow to thicken.

  • Combine the butter and 2 cups of sugar.

  • Add the flax meal water mixture plus the vanilla extract to the butter mixture. Mix to fully combine.

  • In a bowl combine the flour, baking soda, and cream of tartar. Stir to combine.

  • Add the flour mixture to the butter mixture. Stir to combine.

  • Form the cookie dough into a ball. Wrap in plastic wrap and allow to chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Combine the 2 tbsp of sugar and cinnamon in a small bowl.

  • Make 1 1/2 inch dough balls and add the balls to the cinnamon sugar mixture. Roll to fully coat. Place cookie on a parchment lined baking sheet.
  • Bake at 375 degrees for 10 minutes or until the edges are slightly golden brown.
