Rice Cakes with Chocolate and Almond Butter

Ingredients you'll need:

– Rice cakes – I used the thin square ones – Almond butter – you can sub peanut butter or your favorite seed or nut butter if you’d like – Vegan dark chocolate chips – Coconut oil See the full recipe!

Melt the chocolate

Melt the chocolate chips and coconut oil in a steam bath.

Coat with almond butter

Top the rice cakes with a layer of almond butter.

Coat with chocolate

Coat the rice cakes with the melted chocolate.

Cool

Place assembled rice cakes on a cookie sheet and place in the freezer.

Top with almonds

Top with crushed almonds (optional)
