To make this healthy baked oatmeal you’ll need the following ingredients:
- Old-fashioned oats
- Almond milk
- Fresh (or frozen) blueberries
- Walnuts
- Dates
- Cinnamon
- Vanilla
- Baking Powder
- Salt

You’ll want to gather a few supplies to make this baked oatmeal recipe. You’ll need
- a large mixing bowl
- small casserole dish
- non-stick cooking spray
- food processor or high-speed blender
- spoon

Making the Baked Blueberry Oatmeal Recipe
To start off you’ll want to make the date paste. This will be your sweetener for the oatmeal. To make the date paste you’ll add the dates and water to a food processor or high-speed blender. Blend or process until there are no large chunks and the mixture resembles a paste.
Once the past has been made it’s time to mix the oatmeal. In a large mixing bowl combine the dry ingredients. Those include:
- Oatmeal
- Cinnamon
- Baking Powder
- Sea Salt
Whisk those ingredients together so the cinnamon, baking powder, and sea salt are well combined.
Now it’s time to combine the wet and dry ingredients. Add the almond milk, date paste, and vanilla to the oatmeal mixture. Mix to combine making sure that the oatmeal is evenly coated.
Apply non-stick cooking spray to the casserole dish and add the oatmeal to the pan. Sprinkle the walnuts on top and then add the blueberries.
Add the casserole dish filled with the blueberry oatmeal mixture to a preheated 375-degree oven and bake for 35 minutes or until the edges are nicely golden brown.
Tips for making this baked oatmeal with fruit
Some tips and tricks that helped me with this recipe were:
- add the berries at the end so you don’t end up with purple baked oatmeal.
- fresh berries work best but frozen works. If you’re making this ahead of time and using frozen berries don’t add the berries until right before you want to bake this so you don’t get any bleeding.
Can baked oatmeal be made the night before?
Yes. This makes a perfect “make ahead” breakfast. Prepare the oatmeal the night before and refrigerate for 8-hours before baking the oatmeal.
If you are making this ahead of time do not use quick-cooking oats. Also if you are using frozen berries add them before you bake to prevent bleeding to happen.
Can you use quick oats?
This recipe does call for old-fashioned oats. If you do use quick oats in this recipe you may find a runnier consistency.
Old-fashioned oats provide a chewy and nutty texture. Quick-cooking oats provide a softer and moister product which can result in a less crispy edge and soupier middle. If you are using quick-cooking oats I do recommend cutting your wet ingredients down a bit.
How to customize this recipe
The beauty of this recipe is you can switch out the blueberries for any berry. This works great with raspberries, blackberries, and even cherries. You can add diced apples, strawberries, or even a combo of them all!
You can switch out the walnuts for pecans, chopped almonds, or even cashews. If you’re not a nut fan this recipe tastes great without them too.

Vegan Baked Blueberry Oatmeal
Ingredients
- 2 Cups Old-Fashioned Oats
- 1 1/4 Cup Almond Milk
- 1 Cup Fresh Blueberries
- 1/2 Cup Chopped Walnuts
- 1/2 Cup Water
- 12 Dates
- 1 Tbsp Cinnamon
- 1 Tbsp Vanilla
- 1 Tsp Baking Powder
- 1 Tsp Salt
Instructions
- Preheat oven to 375 degrees.
- Place the dates and water in a blender and mix until no large chunks appear.
- In a large bowl, combine dry ingredients and mix well.
- Add the rest of the ingredients, including the date mixture, except the blueberries and walnuts, to the bowl and mix well again.
- Pour the mixture into a small casserole dish that has been coated with non-stick cooking spray.
- Top with walnuts and blueberries.
- Bake for 35 minutes or until golden brown on the edges.
