We all know that the hardest part of getting ready in the morning is finding something that we can eat without worry. I’ve been guilty of wasting plenty of time at starting at the empty cabinets just wishing that something would appear.
But now that I have this delicious vegan granola recipe, I really don’t have to worry about what’s going to feed me when I wake up anymore!
How to make this vegan granola recipe
This recipe takes very few ingredients which is just another reason that I’m a fanatic about it. Gather them up to get started!
Ingredients to make DIY vegan granola
Dry Ingredients:
- 4 cups old-fashioned oats 1 cup chopped peanuts
- 1 cup sunflower seeds
- 1 cup slivered almonds
Wet Ingredients:
- 1/4 cup melted butter
- 1/4 cup peanut butter
- 1/2 cup brown sugar
- 1 Tablespoon vanilla extract
Preheat oven to 300 degrees.
Combine dry ingredients in a large bowl and set aside.
Melt butter and pour into a medium-sized glass bowl. Add in peanut butter and brown sugar.
Place in the oven for 2-3 minutes then remove and stir (this step will heat the peanut butter enough to make mixing easier, but won’t burn it).
Pour wet ingredients over dry and mix thoroughly.
Spread evenly on a large cookie sheet with an edge. Bake for 15 minutes.
Stir granola, then bake for another 15 minutes. Stir granola once more and cook for 15 more minutes (for a total of 45 minutes).
Let cool completely and store in an airtight container.
Should homemade granola be refrigerated?
It doesn’t have to be for this recipe. As long as you have it in an airtight container, it’s fine to store out on your counter or shelves.

One of the biggest complaints that people have about granola is that it loses its crunch quickly. As long as you’re storing it properly, it should actually stay crispy.
