Many people don’t realize that it’s possible for a taco to taste hearty without actually having any meat on it at all. But it’s 100% possible and also 100% delicious. Making these Vegan tacos is about to give your taste buds a true treat.
How to make vegan sweet potato tacos
This recipe is really super simple. Just gather up the simple ingredients listed below to get started.

Ingredients to make sweet potato tacos
- 2-3 large sweet potatoes
- 1/4 cup oil (for tossing sweet potatoes)
- 2 teaspoons chili lime seasoning
- 1/2 teaspoon onion powder
- 1 Tablespoon chopped garlic
- Salt and pepper to taste
Cilantro Lime Rice Ingredients
- 1 1/2 cups water
- add 1 Tablespoon oil
- 1 teaspoon chopped garlic
- 1/2 bunch cilantro, chopped
- Juice from 2 limes
- 1 teaspoon lime zest
Stary by peeling and chopping the sweet potatoes into bite-sized chunks.
Soak in cool water for one hour (this will help crisp the sweet potatoes).
Drain the sweet potatoes and pat dry with a towel.
Next, you’re going to want to combine sweet potatoes, oil, and chili lime seasoning, and onion powder. Do NOT add garlic yet, or it may burn.
Add the sweet potatoes to the air fryer. Fry at 400 degrees for six minutes.
Shake potatoes, cook for six more minutes.
Next, sprinkle on chopped garlic, shake one more time and cook for six minutes. (The sweet potatoes should now be crispy on the outside and well-cooked in the middle.)
Airy fryers sometimes vary, so test a piece to make sure it is done. Add salt and pepper to taste.
Serve these with a side of cilantro lime rice and canned black beans (drained and rinsed).
Put out a variety of tortillas (corn and flour), radishes, chopped onion, tomatoes, olives and anything else you would serve with tacos.
How to make cilantro rice
In large pot, heat oil. Once oil is hot add in garlic. Sauté for 1-2 minutes. Add in 1 cup basmati rice and water.
Heat to boiling. Cover pot and cook for 20 minutes over low heat.
Once rice is done, remove from heat and let rest, covered, for 5 minutes.
After rice has rested, add in cilantro, lime juice, and lime zest. Mix thoroughly and serve hot.
Do you peel the sweet potatoes for this recipe?
You actually do. I make certain that I wash them really well and then peel them and then actually rinse them off again. However, keep in mind that there are great nutrients that are in the skins of sweet potatoes so make certain that you use them in some capacity, if at all possible.
Can other vegetables be added to these sweet potato tacos?
Absolutely. While the sweet potatoes are the star of the show, you can add in more flavors if you want. Some people even like to spice them up by adding in fresh jalapeño or a spicy salsa as well.
How do I store leftovers of these sweet potato tacos?
If you have any left, just store them in a container and keep them in the fridge. Make certain that you store the potato and other ingredients separate from the tortilla or it will get soggy and not be good at all.
