This recipe is one you’ll want to keep on hand because it’s just so useful. It also will save you a ton of money if you use mayo as we do. The base of this mayo is aquafaba and oil so if you find yourself using chickpeas then save the water instead of dumping it down the drain!
First off, what is vegan mayonnaise made of?
Vegan mayo is made of a combination of grapeseed oil, aquafaba, dijon mustard, and apple cider vinegar. It gets its creaminess from the oil and its frothiness from aquafaba.
What is aquafaba?
Aquafaba is the water in which chickpeas have been cooked. It’s the liquid you find in cans of chickpeas. You can use this as a substitute for egg whites.

Is Vegan Mayo healthier than regular mayo?
Vegan mayo is a little bit healthier than regular mayo. It’s cholesterol-free and has fewer calories. Store-bought vegan mayo is still heavily processed and usually has modified food starch and sugar. For this purpose, I do recommend making your own at home.
Does vegan mayo taste like mayo?
Absolutely! It’s thick, creamy, and perfect to use in dips or added to sandwiches.

Vegan Mayo
Equipment
- High speed blender
Ingredients
- 1 cup grape seed oil you can use sunflower or canola oil. Olive oil will change the flavor.
- 1/3 cup aquafaba aquafaba is the water that comes with canned chickpeas.
- 1 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1/4 tsp salt
Instructions
- To make this mayonnaise, you’ll need a high-speed blender. You can also use a stick blender and a tight container for the mix to achieve an emulsion.
- Place all the ingredients except oil in the blender or container. Pulse the blender until all of the ingredients are well combined and start to become frothy.1/3 cup aquafaba, 1 tbsp dijon mustard, 1 tbsp apple cider vinegar, 1/4 tsp salt
- Set the blender on medium and slowly start drizzling into the blender. Do it slowly to give time for the emulsion to happen.You’ll notice how the mixture starts to emulsify and thicken.1 cup grape seed oil
- If the mayo is still liquid after a couple of minutes, add more oil and blend for a few more minutes allowing some air to get inside the emulsion.
