Vegan Tofu Stir Fry

Tofu Stir Fry
- 1 lb extra firm tofu
- 3 tbsp cornstarch
- 1 head broccoli
- 1 medium red bell pepper
- 1 medium yellow bell pepper
- 1 medium carrot
- 3 green onions
- 2 medium red onion
- 2 cloves garlic
- 2 tbsp olive oil
For the sauce
- 1/4 cup water
- 1/2 cup soy sauce
- 1 tbsp sriracha sauce
- 1 tbsp maple syrup
- 1/2 tsp chili flakes
- 1 tbsp grated ginger
- 2 tsp cornstarch
Prepare the stir-fry sauce by mixing its ingredients in a bowl.
Drain and press the tofu to release excess moisture. Then chop the tofu into bite-sized cubes. Coat with cornstarch.
Cook the tofu until crispy in a large wok with 1 tbsp of olive oil. Once it's evenly golden, remove it from the wok and place it on a plate.
Chop the veggies into bite-sized pieces.
Add 1 tbsp of olive oil to the wok and add the chopped carrot and stir until it becomes golden, then add chopped onion and peppers and stir.
Then, fold in broccoli florets and cook until soft.
Last but not least, add sliced green onion and stir.
Incorporate prepared tofu and the sauce. Stir over heat for a couple of minutes for the sauce to thicken and to bold in flavors.
Serve with rice, noodles, chopped peanuts, fresh lime juice, sesame oil, and seeds.
This meal reheats amazingly, so in case of leftovers, keep them in an airtight container for up to three days and warm them up in the microwave or a skillet.
